This is a salad I eat literally everyday for lunch, hence the name. I like to think it is quite balanced, satisfying, and easily adaptable depending on whatever is fresh and in season!

This salad is so simple, it doesn’t really require much of an explanation.

I eat this salad everyday because of it’s simplicity, and I really enjoy all of the textures and flavors going on. I am a big fan of a biting dressing, so this one is quite red wine vinegar-heavy (my personal favorite vinegar), however it gets toned down and balanced when it is mixed with everything else!

I use romaine, sometimes kale or green leaf lettuce, as my base and always add cucumber for crunch, tomatoes for flavor, avocado for fat and creaminess, chickpeas for healthy low glycemic carbs and protein, as well as feta for flavor and more protein and fat!

Depending on the season, I will add some extra vegetables like beets, radishes or onion. Healthy nuts or seeds are also a great addition as well!


THE EVERYDAY SALAD

(serves 1)

Ingredients

The Dressing:

  • 3 tbsp red wine vinegar

  • ½ tbsp olive oil

  • ¼ tsp salt

  • 1/8 tsp pepper

  • 1/8 tsp dried Greek oregano

The Salad:

  • 3 cups lettuce (I prefer romaine, but I will also use kale, very fresh green leaf lettuce or a mix of them)

  • 1/3 cup cucumber, sliced into ¼ inch rounds then halved

  • 1/3 cup tomato, sliced

  • ½ an avocado, diced or sliced

  • ½ cup chickpeas, drained and rinsed

  • 1-2 tbsp regular or vegan feta, chopped into crumbles*

Occasional Add-Ins:

  • Bell Pepper

  • Red Onion

  • Radish slices

  • Carrots

  • Beets

  • Walnuts 

  • Hemp and/or ground flax seeds 

Instructions

  1. In the bowl you’ll be eating your salad in, make the dressing (If making ahead to pack away for work or school, make the dressing separately).

  2. Add in the 3 cups of lettuce into the bowl and toss with the dressing.

  3. Add the chopped cucumber, tomatoes, avocado, chickpeas, feta and any add-ins on top, then dig in!

Notes

*I always prefer to buy block feta. Try not to use the crumbles, as they never have the flavor or creaminess that block feta has. I have also used the Violife vegan feta, and that cheese is good too!
